Take two slices of bread (we recommend our Kara Malted Bloomer) and chop them into small pieces.
Place in a mixing bowl and add the chopped basil, green pesto and grated parmesan. Drizzle with olive oil and give everything a good mix. This is your pesto breadcrumb mix.
Line a baking tray with some olive oil and carefully lay the fish flat, topping each fillet with the pesto breadcrumb mix. Place the tray in the oven and bake at 200°C for 10-15 minutes, or until golden.
