For a healthy menu option, pimp up your fish using pesto and breadcrumbs, a great way to utilise food in the kitchen.
Take 2 sliced of thick sliced malted bloomer and chop into small pieces and place in a mixing bowl along with some ripped basil, pesto and the grated parmesan. Drizzle with oil and give everything a good mix.
Line a baking tray with some oil and carefully lay the fish flat, topping each fillet with the pesto breadcrumb mix. Place the tray in the oven and Bake at 200°C for 10-15 minutes.
