For an exciting twist on a traditional fish dinner, try our Pesto Breadcrumbs using any leftover sandwich breads!
Take two slices of bread (we recommend our Kara Thick Sliced Malted Bloomer) and chop them into small pieces. Place in a mixing bowl and add the chopped basil, green pesto and grated parmesan. Drizzle with olive oil and give everything a good mix. This is your pesto breadcrumb mix.
Line a baking tray with some olive oil and carefully lay the fish flat, topping each fillet with the pesto breadcrumb mix. Place the tray in the oven and bake at 200°C for 10-15 minutes, or until golden.
