This fresh and summery filling tastes absolutely fantastic in fabulously fibre packed, Genius bread and rolls. The juicy chicken and citrus combo is ideal for a gut friendly sandwich. Lunch time goals!
To begin this gluten free and dairy free masterpiece, blend the marinade ingredients together in a large bowl.
Add the chicken breast and coat with the marinade. Cover and leave in the fridge for at least 30 minutes – the longer the better for extra intense flavour.
Preheat the grill and whilst you wait for it to heat up, toss the watercress, orange, spring onion, mint and olive oil in a large bowl. Oranges and spring onions are fibre-tastic and are gloriously good for your gut health.
Season with salt and pepper and get tossing again. Set the salad aside.
Remove the beautifully marinated chicken from the fridge. Place on a baking sheet. Grill for 3 mins on each side, or until deliciously charred and cooked through, brushing with the remaining marinade from the bowl at least once on each side.
Slice the cooked chicken and stack on the high fibre Genius bread.
Place a handful of the salad on top of the chicken, gently press the top slices of bread in place and serve up!
