Ingredients
2 vegan “chicken” breasts
2 Kara Seeded Brioche Style Buns
1 Egg
1tsp Cornflour
30g Chilli Cornchips
1tsp Chilli Powder
1tsp Garlic Granules
1tsp Paprika
1tsp Onion Granules
Low calorie cooking spray
Process
Place the cornchips and spices into a food bag and smash until they are nearly all in a fine crumb, but some larger pieces remain
Ensure the chicken breasts are dry. Dust lightly with the cornflour. Break the egg into a dish and dip each chicken breast into it.
Put the chicken breasts onto the baking tray and sprinkle over mix, ensuring both sides of the chicken is coated thoroughly. Spray with oil and bake for 25 minutes at 180 ºC
Then turn the chicken and spray with oil again. Bake for a further 15 minutes until the chicken is completely cooked through.
Alternative method: Fill a large pot or deep fryer half full with oil and heat to 350°F. Place the chicken in and fry until dark and crisp- 10 minutes. Remove from heat, let sit for 5 minutes.
Take Kara’s Seeded Brioche Style Buns and begin to grill the inside for 3 minutes
Take the bun and top with your favourite vegan sauce, vegan cheese and salad of choice and serve.
