Terrifying Toffee Apple with Meringue Crumble

Are you wanting to adapt your menus for Halloween without being trivial? This deconstructed toffee apple is the perfect menu must have for adults wanting seasonal treats without the dressing up. Use or Lees meringues for an even sweeter taste bud option.

Ingredients

200g Lees Broken Meringue

4 Cooking Apples

200g Caster Sugar

1 tsp Lemon Juice

4tsp Golden Syrup

Optional – red or black food colouring

Process

Tip the sugar into a large saucepan and add the lemon juice and 100ml water. Bring to a simmer and cook until the sugar has dissolved. Swirl the pan gently to move the sugar around, but don’t stir. Add the golden syrup and bubble the mixture until it reaches. It should harden instantly and, when removed, be brittle. If it’s soft, continue to boil. If using food colouring, add at this point.

Slice your apples and place in the mixture. Once all coated, serve in bowls warm. Crush meringue over the top for a sweet crumble.
