8 slices of Fletchers Thick White Sandwich Bread
50g butter
8 eggs
175g castor sugar
300ml milk
1 orange
100g marmalade
300ml double cream
Process
Take your slices of Fletchers Thick White Sandwich Bread and generously butter each slice. Carefully remove the crusts and cut the bread into triangles.
In a mixing bowl, remove the yolks from all 8 eggs and discard the rest. Gently whisk the egg yolks with the caster sugar to create a light, fluffy mixture.
In a non-stick pan, slowly boil the milk over a low heat (for extra flavour, add the seeds of a vanilla pod). Once boiling, carefully whisk the milk into the mixture – this is your custard.
Take an ovenproof dish or a baking tray and pour in ¼ of the custard mixture. Line the bottom with half of the bread slices and top with marmalade. Repeat this layering process three times, then decorate with the zest of an orange by lightly grating off the top layer of the skin (you want only the flavourful orange or yellow part of the peel).
Place the dish into the oven and bake at 180°C for 20-30 minutes until golden brown.
Once baked, serve warm with a simple cream or a luxurious vanilla ice cream.
