Manakish is a savoury pastry traditionally eaten in the Middle East for breakfast, lunch or an indulgent mid-afternoon snack. Quick and easy, this recipe uses baked goods in the form of Kara’s versatile doughballs and just three other ingredients!

2 tbsp zaatar spice mix
Olive oil
Optional: heirloom tomatoes, grated halloumi
Process
Cut the dough balls into two and roll them out into your desired shape.
Mix the zaatar spice with the olive oil until the consistency will allow you to spread on top of the dough.
Either leave the dough as is or top with sliced heirloom tomato and grated halloumi for an enhanced flavour sensation.
Bake in the oven for around 10 minutes until golden and crispy, then serve immediately with assorted vegetables.
Storage & handling
Kara’s Doughballs should be stored frozen at -18°C or below. Once defrosted, do not refreeze.
To defrost
Take the required amount of dough balls from the freezer and place 2″ (5cm) apart on a baking tray. To avoid the doughball skinning, cover with a lightly greased film and place in the refrigerator overnight.
Once defrosted, store in the fridge (5°C) and consume within two days.
