Ingredients
Turkey mince
1/2 onion, finely chopped
1 garlic clove, crushed
1cm fresh ginger, grated
1 green chilli, finely chopped
2 tsp garam masala
1/2 tsp turmeric
1 egg
Red onion, sliced
Baby spinach
Process
To make the keema, lightly fry the chopped onion, ginger, chilli and garlic until soft and translucent.
Add the turkey mince and fry until golden and cooked through before adding the garam masala and turmeric spices. Fry for one minute then leave the mince mixture to rest.
Fry the egg and toast the roll.
Begin building the roll by adding mango chutney to the base, followed by spinach, keema mince, red onion and the fried egg.
Serve immediately with a side of poppadoms and mango chutney.
Top tip: As diners continue to look for healthier menu options, we’ve used turkey mince for its lower fat percentage. For an added dose of vegetables, add peas.
