Gluten Free Curried Chickpea Rolls
Delicious gluten-free recipes don’t get much easier than this. Not only are these curried chickpea rolls good for the gut, but you can whip up them up in a matter of minutes. A double whammy of chickpeas and hummus adding an extra dose of fibre. Using Genius Gluten Free Rolls, these rolls are a great veggie option on the menu!
4 Genius Seeded Cafe Rolls
2 carrots, grated
1 tin chickpeas, drained
3 tbsp mango chutney
1 tsp tikka powder
4 tbsp sultanas
4 tbsp vegan mayonnaise
2 large handfuls baby spinach, shredded
Combine the grated carrots and the shredded spinach and mix in a large bowl.
In a separate bowl, mix the hummus, chutney, tikka powder and mayonnaise until combined to form a decadent sauce.
Add the carrots, chickpeas, sultanas and spinach to the bowl and mix well until everything is coated in the tasty sauce. Just like the Genius rolls, chickpeas are chock-full of fibre which is essential for a healthy gut.
Slice the rolls and heap a couple of spoonfuls of the mixture onto each. Serve immediately with a simple side salad or crisps for a light lunch option.
