Brush the inside of the bread lightly with olive oil and grill both sides of each piece of bread until golden brown.
Meanwhile, warm the meats and vegetables slightly in the microwave. Use paper towels to blot away any oil or marinade.
Toast a couple of tablespoons of pine nuts in a dry non-stick skillet until lightly brown, shaking the pan once or twice to prevent burning.
Layer the greens, meats, veggies and cheese on the toasted bread. Add pine nuts and a quick drizzle of olive oil, if desired.
Sprinkle with salt and freshly ground pepper, and serve warm.
