- Combine the grated carrots and the shredded spinach and mix in a large bowl.
- In a separate bowl, mix the hummus, chutney, tikka powder and mayonnaise until combined to form a decadent sauce.
- Add the carrots, chickpeas, sultanas and spinach to the bowl and mix well until everything is coated in the tasty sauce. Just like the Genius rolls, chickpeas are chock-full of fibre which is essential for a healthy gut.
- Slice the rolls and heap a couple of spoonfuls of the mixture onto each. Serve immediately with a simple side salad or crisps for a light lunch option.
