For a fruity twist on a classic try Kara's Bread and Butter Pudding. This recipe combines leftover bread and can be changed on menus depending on seasonal fruit.
Carefully dice Kara’s Gourmet Brioche Buns into small bite size pieces and place in a baking dish and top with your berries of choice, we chose fresh raspberries and blueberries.
In a mixing bowl, carefully remove the yolks from all 8 eggs and discard the rest. Wisk the egg yolks with the caster sugar to create a mixture.
In a pan, carefully begin to boil the milk over a low heat (you can add the seeds of a vanilla pod if you wish for extra flavour) Once boiled, carefully whisk the milk into the mixture- this will be your custard.
Pour the custard mixture over the brioche and berries and transfer the dish to the oven. Bake for 30 minutes at 180°C.
Serve in a bowl for a scoop of ice cream and crème fraiche.
